| <b>Mary's Meatloaf Muffins with Cheesy Sauce</b>
(an original recipe)
1 pound ground pork
1 pound extra lean ground beef
about 1/2 cup chopped onion
about 1/4 cup chopped celery
2 large cloves of garlic, finely chopped
1 large egg, beaten with a bit of milk
1 cup crushed Ritz crackers (Put 30 crackers in a plastic bag & crush with a rolling pin.)
1 tablespoon Worcestershire sauce
2-3 teaspoons Italian seasoning
Mix all ingredients together by hand in a bowl. Wash up. This will make 18 meat muffins, so lightly coat 18 muffin wells with olive oil. (I use the Pam Organic olive oil spray.) Fill each tin evenly with meat mixture. Bake for about 20 minutes at 450 degreesF. (You might want to cut open 1 muffin to see that it is cooked through.) While muffins are baking, make the Cheesy sauce.
Cheesy Sauce
1 can (10.5 oz) cream of celery soup
1 cup milk
1 1/2 cups shredded sharp cheddar cheese
1 tsp dried cilantro (optional)
Heat the soup and milk over medium heat; add the cheese and stir until melted. Add the cilantro to the sauce, if desired. Pass sauce as a gravy for the meatloaves.
Makes about 6 servings
Serve with mashed or baked potato, salad, and vegetable of choice.

| Well, the end of the school year has been particularly hectic this year ... plus, some personal problems at home. I have been around - lurking, as it were. I haven't burned anything for quite some time, though. <img src="./images/forum/smilies/icon_frown.gif" alt=":-(" />
But, now that summer break is here, I'm hoping to have a bit more time to burn and interact here.
I hope you enjoy the meatloaf. Meatloaf is hubby's favorite comfort food and I wanted to try something new. <img src="./images/forum/smilies/icon_smile.gif" alt=":-)" />

Looks like another good one. I,ll have to try this one hubby loves meatloaf. Good way to help with portions control too. Great idea. Thanks.
