Now that I'm home for Summer Break, I wanted to try out some new recipes. I found a couple of baked Mac & Cheese recipes that sounded good and fiddled around with the measurements and ingredients to come up with my own concoction. This is what I came up with - beats the heck out of those box mixes! My family LOVED it!!!<img src="./images/forum/smilies/icon_biggrin.gif" alt=":-D" /> Hope you all enjoy it as well. ------------------------------------------------------------------------------ <b>Homebaked Mac & Cheese</b> Serves 4-5 INGREDIENTS *8 ounces elbow or small shell macaroni *2-3 tablespoons butter or margarine *1/4 cup all-purpose flour *2 cups milk *1 1/2 cup shredded Cheddar cheese *8 ounces cubed processed cheese food (I used Velveeta) *a sprinkle or two of paprika, to taste (optional) *breadcrumbs (optional) I used crushed Triscuits with Rosemary & Olive Oil - you only need a handful. DIRECTIONS In a large pot with boiling salted water cook the macaroni until al dente. Drain. In a medium saucepan, over medium heat, melt butter. Add flour to first cup of milk and mix vigorously. Add to butter in pan. Add second cup of milk and cook until thick and bubbly, about 5 to 7 minutes. Add cheeses and stir until completely melted. Stir in paprika, if desired. In a large bowl mix together the drained pasta and cheese sauce mixture. Toss to coat evenly. Pour into a greased (I use Pam Olive Oil spray) 2 quart casserole dish. Bake in a preheated 350 degree F (175 degrees C) oven for about 30 minutes. Cover with foil for first half of bake time. Remove foil and sprinkle with breadcrumbs, if desired, during last half of bake time. Let stand 8-10 minutes before serving. [addsig /]

Sounds good Mary. I think I will try this with the meatloaf muffins instead of the cheese sauce. But will try the sauce sometime too. Keep the great recipes coming.
