Title Strawberry Muffins 
        
        
Preparation time about 30 minutes 
Servings 12 muffins 
Ingredients 2 cups white flour*
1/2 cup sugar
1 1/2 teaspoons baking soda
2 eggs
1 cup yogurt
1/4 cup applesauce
1 teaspoon vanilla
1 cup chopped fresh strawberries

* To make healthier muffins you may use 1 C white flour & 1 C wheat flour. 
Method Preheat oven to 375-degreesF and grease muffin tin.

In a bowl, mix togethr dry ingredients: flour, sugar, and baking soda. Toss chopped strawberries into flour mixture and stir gently to cover all.
In another bowl, mix together eggs, yogurt, appleesauce, and vanilla. Pour into flour/strawberry mixture and stir just until moist and all flour is incorporated.
Spoon batter into greased muffin tin.
Bake for 20-25 minutes or until golden brown. (Mine took 20 min.)

*Based on a recipe from Stonyfield Farm Organic Yogurt.

I substituted applesauce for the butter which was called for in the original recipe. And, I used all white flour because I didn't have the 1 cup of wheat flour the original recipe called for. This version actually has 12 less calories, and 3.7 less grams of fat, but 3 more grams of carbohydrates than the orignal.
If you use the 1 cup of wheat flour as called for in the recipe, you will also get 2g of fiber.
